Ultimate Homefries

Who doesn’t love homefries? I’ll take a potato basically in any form… creamy in a soup… mashed… baked… fried (although that is very rare)… hash brown… etc.


This is a great meal prep item to have ready to go for those days / meals you don’t have time. These will last in the fridge in a sealed container for 3-5 days. If you don’t eat them before then that is.


One of our beloved former cooks hooked us on coating our homefries with more nutritional yeast than you think you should need. It’s a game changer. Addictive. You can leave it off if you don’t have it, of course… but if you do… I promise it is SO worth trying. You’ll likely never want to look back.




Ultimate Homefries


Yields ~4 servings


INGREDIENTS


4 red potatoes*, cubed


1/2 sweet yellow onion, diced


3-4 tbsp olive oil


2 tsp paprika


1 1/2 tsp salt (I use pink fine ground Himalayan)


1/2 tsp fine ground black pepper


4 tbsp nutritional yeast


1 tbsp turmeric powder


2 tsp cumin powder



Note: You can leave out the nutritional yeast, turmeric, and cumin if you want for more simple classic homefries. But I just LOVE cumin so much… like adding turmeric to everything I can for some extra anti-inflammatory / health boost… and the nutritional yeast gives the potatoes this magical cheezy “crust”. SO GOOD. Those last 3 ingredients are what make these “Ultimate” :)


*You can sub other potatoes, but they do each act slightly differently with different moisture contents, etc. I like red potatoes both for flavor and they are considered safe for candida - they are more alkaline, unlike most other starchy roots turning to sugar super fast. P.S. yes, I leave the skins on. Lots of good stuff in there, plus delicious!



DIRECTIONS


Pre-heat oven to 450 degrees F (232 degrees C)


Toss all ingredients together on a baking sheet, evenly coating the potatoes and onions


Bake for 25-30 minutes, until fully cooked and golden.


Eat them up!!
